Remembering Mama's Coconut Cake





When I was growing up, my great-grandmother - who we all called Mama - made a coconut cake every Christmas.
I remember it vividly. Proudly displayed on a cake pedestal. Covered in coconut flakes.
I loved that cake.
Food creates traditions and memories. Food brings families and friends together.
As a Mom of two, I get great satisfaction when I create a meal or a special food dish that brings delite to my children.
You can see it in their eyes when they are truly enjoying something.
I consider myself well-traveled and a food adventurist.
But - when it comes down to it - I'm a girl from small town Texas who loves home cookin' with a Southern-flair.
